So I got inspired over the <a href="http://www.pinksmurf.com/2013/12/welcoming-december-over-weekends.html">weekend</a><br />
and decided to do my twist on a recipe<br />
by cutting down the intake of butter, sugar<br />
and also switching the egg for bananas instead.<br />
<br />
Here's my twist on Banana Oatmeal Cookies!<br />

Ingredients:<br />
<br />
100g Butter<br />
150g All-purpose flour<br />
1/2 tsp Baking powder<br />
1/8 tsp Salt<br />
50g Rolled oats<br />
50g Brown sugar<br />
1 tbsp Honey<br />
1/2 cup Ripe banana (mashed)<br />
1/2 tsp Vanilla extract<br />
75g Dried fruits (i used dried apricots and raisins)<br />
35g Walnuts<br />

Methods:<br />
<br />
1) Preheat oven to 150C. Sift flour, baking powder and salt together in a bowl. Add oats and mix well.<br />
2) Whisk butter and brown sugar until creamy. Add mashed bananas and mix well.<br />
3) Add in honey, vanilla extract and blend well.<br />
4) Dump in all the dry ingredients, chopped up walnuts and dried fruits. Mix well.<br />
5) Scoop out 1/2 tbsp of the dough and drop on your baking tray (with greased parchment paper).<br />
6) Sprinkle more oats or rice sprinklers and bake them for 15 minutes or until golden brown.<br />

Started off Saturday morning<br />
with Chee Cheong Fun at the famous<br />
Hai Keng Restaurant for RM3 a plate.<br />
<br />
Lucky us as we arrived at 8:55am<br />
and it was sold out by 9:05am. Crazy.<br />
<br />
There are two Chee Cheong Fun stalls here.<br />
One by an auntie that serves yong tau foo as well<br />
and another by an old man that serves it plain.<br />
<br />
We tried both.<br />
<br />
As reviews stated and we both agreed,<br />
the old man (which is closer to the back of the restaurant)<br />
was clearly the winnner despite it being cold and plain,<br />
but there was just something in the sauce<br />
that strongly distinguished it from its competitor.<br />

by my volunteer work with <a href="https://www.worldvision.com.my/Pages/Home.aspx">*World Vision*</a><br />
on the on-going project, Gift of Hope 2013.<br />

Basically instead of just doing one-off donations,<br />
World Vision has now done it in a more creative manner<br />
to donate a goat/ chicken/ football/ clean water/ healthcare etc<br />
to these children and their community.<br />
<br />
Also, it can be a great gift for Christmas<br />
if you have yet to get your loved ones anything yet<br />
as you can donate it on behalf of your loved ones' names<br />
and send it in a giftcard.<br />
<br />

We had the big Aussie breakfast,<br />
eggs benedict and this lovely chocolate jaffa cake.<br />

Portions are small as indicated on the reviews<br />
and a lil small in fact for us to indulge to even taste<br />
but I would consider to come back for their famous pork burger.<br />

Okay let me explain first<br />
why accidental.<br />
<br />
Because initially I wanted<br />
to make skewers with the mince meat<br />
but somehow it was too soft and sticky<br />
and ended up in dollops on an oven tray.<br />
<br />
But funny enough,<br />
I was so upset as i looked at the <br />
miserable dollops cooking away in the oven,<br />
I took a quick shower,<br />
and when i came back... boy, did they smell amazing!<br />
<br />
It tasted great too!<br />
<br />
<br />
<u>Ingredients:</u><br />
<br />
Chicken nuggets:<br />
1) Mince chicken meat<br />
2) 1 Egg<br />
3) 2 tablespoon of flour<br />
<br />
Mash Potatoes:<br />
1) 1 potato (or 2 if your potatoes are small)<br />
2) 1 tablespoon of milk<br />
3) 10 grams of butter<br />
4) Cheese, parsley, herbs (optional)<br />
<br />
I served mine with my <a href="http://www.pinksmurf.com/2013/11/homemade-from-scratch.html">*homemade pesto*</a>.<br />
<br />
Side Veges:<br />
1) French beans<br />
2) Button mushrooms<br />
3) 5 grams of butter<br />
<br />
*Serves 1 portion<br />
<br />

<br />
<u>Methods:</u><br />
1) Preheat your oven to 150C. <br />
2) Peel your potatoes, chop them up (not too small or your potatoes will start absorbing too much water and you'll end up with a watery thin mash) and put them in a pot of cold, salted water. Bring them to a boil for 12-15 mins, until you can poke thru your largest chunk of potato without any resistance.<br />
3) In a bowl, mix your mince meat, egg and flour. <br />
4) Line and grease (important!) your parchment paper on your oven tray and drop your mixture onto the tray. Remember not to make it too big chunks or it might not cook all the way thru! Cook for 25-30 mins.<br />
5) Blanch your french beans and mushrooms. <br />
6) Drain your potatoes and leave it to dry for a minute in the pot. Then add butter, milk, optional ingredients and mash it up. (Dont use a food processor as it will overwork the potatoes. A very hard lesson i had to learn. -_-)<br />
7) Drain your veges and mix them up with butter.<br />
8) Start plating your dishes and your nuggets should be pipping hot from the oven right now!<br />

1) Hershey dark chocolate (1 bar)<br />
2) Assortment of nuts (I used walnuts)<br />
3) Assorted dried fruits (I used candied orange peel)<br />
3) Orange flavouring (1 tsp)<br />

Method:<br />
1) Melt your chocolate bars in a microwave for about 40 seconds.<br />
Dont overheat them or it'll dry up.<br />
2) Mix in the nuts, fruits and flavouring.<br />
3) Pour them into your tray and refrigerate them for at least 2 hours.<br />
You can choose to do lil drops like i did or spread them out into rectangular bars.<br />
4) Enjoy!<br />

with the prep of the wedding in Sept<br />
and my father-in-law was diagnosed <br />
with cancer earlier this year,<br />
we decided its time to change things up.<br />

So by cutting down carbs, salt, oil, sugar, dairy<br />
and processed food (eg: canned food, chips, store-made sausages etc),<br />
together with my annual <a href="http://www.pinksmurf.com/2006/08/pei.html">*vegetarian month*</a><br />
for the ghost festival that is a family tradition,<br />
I started trying new things with trial and error<br />
to excite the palate and our diet.<br />

Now these recipes below,<br />
requires a food processor.<br />

I just bought mine about a month ago<br />
and its the best thing Ive ever bought to date,<br />
as it makes things faster <br />
and easier for my tiny lil kitchen!<br />

Now as i mentioned,<br />
we tried to cut down on dairy<br />
when we learned my father-in-law <br />
was diagnosed with cancer,<br />
because in some cancer research articles,<br />
it was said that cancer cells actually feed<br />
on sugar and dairy.<br />
<br />
We dont know how true these articles are<br />
but its always best to stick to healthier options<br />
and to remember that moderation is key.<br />
<br />

Ingredients are simple:<br />
Cashew nuts 100g<br />
Water 200ml<br />
<br />
That't it.<br />
<br />
Of course theres the option of:<br />
- Cinnamon<br />
- Honey<br />
<br />
But me and the boy felt no need of those<br />
as we were going to drink them in our cereal,<br />
which already has sugar in them.<br />
<br />
This recipe will make about 125ml approx of cashew milk<br />
and it will taste a lil like soy milk (but more diluted).<br />

1) Pour both water and cashew nuts <br />
into a food processor and blend them<br />
until its white and milky.<br />

Ever since i was introduced to pesto<br />
when i was England,<br />
it was my go-to easy food<br />
whenever i was in a hurry.<br />
<br />
What i love about pesto,<br />
is that you can eat it warm or cold<br />
with your pasta or meat in an instant<br />
BUT i know pre-packed pesto can be really high<br />
in oil and cheese,<br />
which will definitely send your calories<br />
sky rocketing through the roof!<br />
<br />
So I did tweaks to this recipe <br />
I got off the internet and this is my version<br />
of a spinach and toasted walnut pesto.<br />
<br />

Ingredients:<br />
Spinach (approx 75g)<br />
Walnuts (45g)<br />
Extra virgin Olive oil (1/4 cup) - may choose to add more for a more liquid texture.<br />
Pinch of Salt<br />
Pinch of Pepper<br />

*Feel free to add lemon juice for a more citrus flavour. I omitted this.<br />

Methods:<br />
<br />
1) Toast your walnuts in an oven at about 180C for 5 mins.<br />
2) Combine the walnuts, spinach (chopped up roughly), salt, pepper<br />
and olive oil into the food processor and blend.<br />
3) You might need to stop and scrape the sides a few times <br />
and then blend again to get it smooth. <br />
Or you can choose to leave it chunky as well. Like I did. :)<br />

4) When you're done, just transfer it to a air-tight container<br />
with a cling wrap over the top. This will ensure it to last fresher.<br />

It should serve about 4 pax <br />
and can last in the fridge for about 3 days. <br />

I admit I was pretty skeptical about it at first<br />
but its surprisingly good!<br />
<br />
So instead of having rice (carbs),<br />
how about another alternative<br />
that actually looks like rice! haha!<br />

1) Chop up your cauliflower into florets and add them to the food processor.<br />

2) Transfer to a microwavable bowl and put a cling wrap on. Microwave it for about 4 minutes.<br />
3) Ready to serve.<br />

is as good as the ones in Macau,<br />
considering they import their fishballs from Malaysia anyway!<br />

Afterall, it helps control my portion<br />
when i tend to nibble!<br />

Ingredients:<br />
<br />
2 ripe bananas<br />
2/3 cup of sugar<br />
1 3/4 cups of whole wheat flour (i used organic multi grain flour)<br />
1/2 cup applesauce<br />
1 teaspoon baking soda*<br />
1 teaspoon salt<br />
<br />
*No baking soda? No problem! 1/2 teaspoon of baking soda = 1 teaspoon of baking powder<br />

Directions<br />
<br />
1) Preheat oven to about 180C. Lightly spray a 9-inch loaf pan.<br />
2) In a bowl, mash the bananas with a fork.<br />
3) Add the rest of the ingredients and mix well. Pour into greased pan.<br />

Okay I know starting at 27<br />
to learn to cook and bake,<br />
isnt exactly a 'wow' factor anymore<br />
but it is personally a huge achievement for me!<br />
<br />
I finally put my oven to good use<br />
and whipped up a huge batter<br />
(and thank goodness i did!)<br />
for 2 and a half tray of mini muffins.<br />
<br />
I bought the mini muffin tray<br />
so that i was able to control my portions! haha!<br />
<br />

Ingredients:<br />
2 cups of self raising flour*<br />
2/3 cup caster (super fine) sugar<br />
60g butter, melted<br />
1 egg<br />
3/4 cup milk<br />
1 teaspoon vanilla essence<br />
200g milk chocolate bits/chips<br />
<br />
Serves <i>approx</i> 33 mini cupcakes.<br />

*No self raising flour? Not a problem! I swapped mine with every 1 cup of self raising flour = 1 cup of all purpose flour, 1.5 teaspoon of baking powder and 1/4 salt. ;)<br />

Now being the health freak that i am,<br />
i used organic multi-grained flour,<br />
switched 30g of butter to 30g of <br />
the <a href="http://www.pinksmurf.com/2013/11/homemade-applesauce.html">*homemade applesauce*</a> I did earlier,<br />
I also used low fat milk and halfed & also switched<br />
the milk choc chips to dark chocolate ones.<br />

Method:<br />
<br />
1) Preheat oven to 180C and lightly grease muffin pan.<br />
2) Sift flour and sugar into bowl.<br />
3) Using a spoon, stir in the remaining ingredients until well combined.<br />
4) Spoon mixture evenly into pan, filling cups 3/4 of the way. (because it will rise!)<br />
5) Place into preheated oven and bake for approx 25 mins. Muffins are cooked when they are light and golden.<br />
6) Remove from oven and allow muffins to stand in pan for approx 5 mins.<br />
7) Invert them onto wire rack to cool completely.<br />

Now i wont lie.<br />

I was so excited with my first batch<br />
that i didnt quite check my oven properly when i baked<br />
and totally ruined it by burning the top of my mini muffins.<br />
<br />
So luckily i made a huge batch of batter<br />
and switched things around.<br />
<br />
I separated my batter into 3 bowls.<br />
<br />
First bowl, I added orange zest and candied orange peels.<br />
Second bowl, I added peanut butter and added choc rice on top.<br />
<br />
For the third, I placed a lil batter in the cups, <br />
then stuck a piece of milk chocolate square in the center<br />
and covered it again with batter,<br />
coated the top with crushed walnuts.<br />

I did different tops <br />
so i could differentiate them.<br />

Verdict: Funny enough, the boy and I both agreed that the orange flavoured muffin was the best! yay!<br />

So the other day me and mum <br />
were discussing about our annual Christmas gathering<br />
and what should we have on the menu.<br />
<br />
Somehow we both remembered this cake<br />
that she used to make for us alot<br />
during our childhood.<br />
<br />
This recipe of the 'Black Chocolate Cake' <br />
or better known locally as 'Kuih Batik',<br />
was taken from the Sarawakians (East Malaysia).<br />
<br />
Best part is there's no baking involved!<br />
<br />
So mum dug up the recipe <br />
and made a test-run batch.<br />
<br />
Oh man. It felt like Christmas came early. :D<br />

<u>Ingredients:</u><br />
<br />
450g butter<br />
7 eggs<br />
Some cocoa (no specifics)<br />
1/2 kg <a href="http://en.wikipedia.org/wiki/Marie_biscuit">*Marie Biscuits*</a><br />
Approx 14oz milo<br />
1 tin of condensed milk<br />
1 cup of cold water<br />
Browning<br />
<br />
(Sorry if measurements arent specific, this was from a recipe book<br />
taken from her Sarawakian neighbour almost 20 years ago! If you're trying this out,<br />
just try to do according to what-feels-right and you can reduce or add or substitute <br />
anything else.)<br />
<br />
<br />
1) Beat butter till fluffy, then add eggs in one at the time. Continue to beat and mix both.<br />
2) Mix in milo, put cocoa, then condensed milk and water.<br />
3) Transfer mixture to a pot. Then cook over slow fire until sticky and almost lumpy. <br />
4) Once almost lumpy, off fire and add in broken pieces of the biscuits. Stir.<br />
5) Lastly, press mixture into baking tray/ tin foil with back of the spoon until surface is flat. <br />
Let it cool and refrigerate.<br />

With all the health issues<br />
that has been happening to my family<br />
in the last 3 years,<br />
im trying slowly to change our diet.<br />
<br />
First by starting to eat clean <br />
and of course exercising regularly,<br />
then next is to learn to make <br />
all my food from scratch,<br />
which isnt easy i know,<br />
but we're trying to get rid of<br />
process food or canned food <br />
as much as possible.<br />
<br />
So learning to make my own <a href="http://www.pinksmurf.com/2013/11/homemade-cream-sauce-bechamel-sauce.html">*sauces*</a>,<br />
jams, butter, milk etc.,<br />
is a huge step for me.<br />
<br />
So since ive been feeling<br />
under the weather lately,<br />
bored and stuck at home,<br />
I decided to whip out my ever-growing <br />
recipe file that I am slowly collecting<br />
and made this applesauce from scratch.<br />
<br />
Applesauce or Apple Puree are a good source<br />
for babyfood, to be eaten with oats/ pancakes/ bread/ meat,<br />
or even a great baking ingredient substitute<br />
if you dont want eggs in your desserts.<br />
<br />

Okay so here's the recipe.<br />
<br />
Ingredients:<br />
1kg Apples (i used fuji apple)<br />
1/3 cup of water<br />
<br />
Now to tell you the truth, <br />
measurements dont quite matter<br />
as I end up adding more water than was required.<br />
<br />
Just make sure you add bit by bit and if you are<br />
unhappy with the consistency (if you want it thicker or thinner),<br />
then you can add or reduce the water.<br />
<br />
<br />

So first peel, core and cut the apples up<br />
and put them all in a pan with the water.<br />
<br />
Bring it up to a boil then reduce the heat<br />
to cook for about 20-30 mins.<br />
<br />
Keep checking and stiring your apples <br />
and make sure they dont dry out!<br />
<br />
Most recipes called for lemon juice,<br />
cinnamon or even brown sugar to be added in<br />
but i find it sweet enough for my liking<br />
just the way it is (natural sugar from the apples).<br />
<br />
Once its soft, you can use a potato masher<br />
or if you like it chunky, you can leave it as it is<br />
or like what i did was I put them in a blender<br />
and pureed it to my desired consistency.<br />
<br />

It can store in the fridge in a jar<br />
for up to 3-4 days but can easily be stored away<br />
in the freezer for months.<br />

So there you have it,<br />
your very own applesauce from scratch!<br />

No preservatives, no sugar added and gluten free!<br />

Finally tried the famous Gold Chilli Restaurant,<br />
right next to Darulsalam in SS15 Subang Jaya (near the wet market).<br />
<br />
The boy had their famous Tom Yam Fried Rice<br />
and I had their butter fried chicken.<br />

Hmmm. Yum!<br />
<br />
The place is usually pack from 8pm-11pm,<br />
so make sure you're there early <br />
as seats are limited in that tiny shop!<br />

The other day we were about to head to bed<br />
when the boy suddenly hugged me from behind and said:<br />

<font color="#0000CC"><b>Him:</b> It's nothing. Its too emotional to say. Everytime i think about it, i feel like crying.</font><br />
<font color="#ff0033"><b>Me:</b> Why?? Its okay. We can talk about it?</font><br />
<font color="#0000CC"><b>Him:</b> Hm... okay. Its just recently i read an article about this guy in the army. </font><br />
<font color="#ff0033"><b>Me:</b> Ahuh.</font><br />
<font color="#0000CC"><b>Him:</b> He lost both his legs in the war but his fiance decided to stay with him no matter what and she did.</font><br />
<font color="#ff0033"><b>Me:</b> Oh...ah hm.</font><br />
<font color="#0000CC"><b>Him:</b> ... but the incident made him very bitter, changed him and he became a very angry person due to his incapability. They eventually split up. Not because of his disability but because he has changed to be someone different and verbally abusive.</font><br />
<font color="#ff0033"><b>Me:</b> Oh. no. Hm. Thats sad...</font><br />
<font color="#0000CC"><b>Him:</b> Yeah but i was thinking, could it be that he had done that on purpose so that she would leave? You know, so that he wouldnt be a burden and she could move on with her life? And then i thought if that ever happened to me, I wouldnt want to burden you too...</font><br />

Nosh has been on our to-eat-list<br />

We were close to being full<br />
but we were here mainly for its <br />
famous desserts and just couldnt<br />
leave the place without trying!<br />

What we didnt know was that desserts<br />
are a minimum order of 2 types (or 3 in a set)<br />
and i really wanted to try their orange cake<br />
so we also ordered their peanut butter cake to try.<br />
<br />
The boy didnt quite like the peanut butter cake,<br />
to his exact words, they didnt exactly taste<br />
like peanut butter altho im quite sure he meant<br />
the ones from the jar.<br />
<br />
I felt that the peanut butter was done from scratch (own made)<br />
and thought it was nice. Not the best but still good.<br />
<br />
As for the orange cake,<br />
it was still delish despite it being a bit dry.<br />
I would say i still prefer the one from <a href="http://www.pinksmurf.com/2013/10/nutmeg-bv-2.html">*Nutmeg Cafe*</a>. <br />

So proud of myself as its the first time <br />
I made it from scratch and the husband<br />
couldnt stop telling me how good it was.<br />
(Dont know if hes trying to make me feel better! haha!)<br />
<br />
But I had a few people coming to me<br />
and asking me how I got it done <br />
so im sharing this easy recipe here.<br />
<br />
To make the sauce, we need only 3 ingredients:<br />
<br />
1) 30g all purpose flour<br />
2) 30g butter<br />
3) 500ml milk (depends on how thick you want, I only added about 150-200ml)<br />
<br />
So step by step is easy!<br />
<br />
First, melt butter in pan and then add butter<br />
over gentle fire for 1-2 mins. This will then form the 'roux'.<br />
<br />
Then add in the milk one bit at the time, and continue to stir.<br />
Traditionally you're suppose to warm up the milk first<br />
but you can also choose not to. I didnt.<br />
<br />
Cook for another 2-3 mins once all the milk is added<br />
to get rid of the raw flour taste.<br />
<br />
Then add in cheese, salt and pepper for additional seasoning.<br />
Again, I skipped this part as I wanted to go for a healthier version<br />
but when i tasted it, I could feel that it just needed that cheese touch,<br />
despite the hubby saying it was just perfect.<br />
<br />
Different tastebuds i suppose!<br />
<br />
I mixed the sauce in Farfalle pasta<br />
with pork, white onions and cauliflower. :)<br />

The title says it all.<br />
<br />
Was having the worse Monday blues<br />
anyone could possibly go through,<br />
so I decided to whip up something simple<br />
by doing a dark chocolate bark<br />
with walnuts and orange peel.<br />

Only 3 ingredients:<br />
1) Choice of chocolate (milk, white, dark)<br />
2) Choice of crushed nuts (Cashew, almonds, walnuts etc)<br />
3) Choice of dried fruit (Apricots, cranberries, raisins, prunes etc)<br />
<br />
*There arent exact measurements, it just depends how much you would want to make or prefer to add in.<br />
<br />
<br />
Melt your choice of chocolate,<br />
(i chose the healthier choice of dark chocolate)<br />
and melt them in a bowl over<br />
boiling hot water for a few mins.<br />
<br />
When done pick the bowl out of the pot<br />
and stir in the dried fruits (as many as you want).<br />
<br />
Do this quickly before chocolate starts to set.<br />
<br />
<br />

Place them over a tray lined with parchment paper<br />
and sprinkle your crushed choice of nuts (i chose walnuts)<br />
over your chocolate mixture<br />
and let it set in the fridge for a <br />
good couple of hours till its solid.<br />
<br />
So simple and you can change to play around<br />
with the choice of fruits, nuts and flavour you want <br />
and it can be a wonderful lil' door gift too<br />
by breaking the choc barks up and wrapping them<br />
in clear, decorated bags.<br />
<br />
All in a short span of 5 mins to make!<br />
<br />
Now the only thing dreadful is the waiting time<br />
for it to set so i can indulge. Urgh!<br />
