Mini Vegan Banana Bread.
Back in the kitchen.
Im seriously on a roll here
after purchasing my new baking tools.
So this time round,
I went for a healthier alternative
to a banana bread.
Yes. Vegan style.
No butter or milk involved. :)
Unfortunately, i didnt have enough funds
to buy a loaf tin to bake my bread in
so i re-used my *mini muffin trays*
to make mini banana breads. haha!
Afterall, it helps control my portion
when i tend to nibble!

Ingredients:
2 ripe bananas
2/3 cup of sugar
1 3/4 cups of whole wheat flour (i used organic multi grain flour)
1/2 cup applesauce
1 teaspoon baking soda*
1 teaspoon salt
*No baking soda? No problem! 1/2 teaspoon of baking soda = 1 teaspoon of baking powder
Directions
1) Preheat oven to about 180C. Lightly spray a 9-inch loaf pan.
2) In a bowl, mash the bananas with a fork.
3) Add the rest of the ingredients and mix well. Pour into greased pan.
4) Bake for 45-60 minutes or until a toothpick inserted in the middles comes out dry!
5) Cool in pan for 15 minutes and then transfer to a cooling rack.
Makes 8 servings. Enjoy!
